Bulgur Wheat Dish This dish calls for Bulgur Wheat, but all types of grains can be substituted. Use couscous, quinoa, kasha (Buckwheat) or any other grain. Just check how much liquid is needed for that grain on the package label and substitute that amount of chicken broth.
Whatever grain you choose, this dish looks and smells great because of the onion and the colors of the peppers and broccoli in it.

1 onion, medium, chopped
1 cup Broccoli, fresh, chopped
1 cup carrots, shredded
1 Peppers, bell, medium, fresh, chopped (red, yellow or green)
1/3 cup chopped parsley (or 2 tsp. dried)
1 tsp Oil, canola
1 1/2 cup Wheat, bulgur, dry
2 cup chicken broth, low sodium
8 oz Beans, garbanzo, canned, drained
makes 8 servings
Heat canola oil in a large skillet. Add onions and cook until soft.
Add bulgur and stir to coat. Add 2 cups chicken broth to the skillet, and bring to a boil.
Lower the heat, add remaining vegetables and chickpeas. Cook for 10 minutes or until the liquid is absorbed.
Add parsley and stir. Serve warm or cold. |
