matzo brei with lox and onions Theer si alarge schism on this one. some say not ot combine, some say its good to combine.. i love this combination...... its one of my lifetime favorites.
1 board matzo
2 ounces smoked or cured lox ( se previous recipe tomake lox)
1/8 cup diced fine onions
2 jumbo, really big eggs
salt and pepper
in a bowl crack room temp eggs. add salt and pepper.
Break up matzoh and mix well. let sit 1 minute.
IN hot fry pan cook salmon until it falls apart into little pieces, add onions.. mix around on low heat, so as not to overcook.
add egg mixture when onions begin to smell really good. toss around until matzoh is done.
serve with coffee, alka seltzer |
