Being jewish has xome major dietary problems with it. The food is often rich, carb intensive. SO I save these foods for holidays and take extra insulkin, extra chromium and extra Bs to make sure i dont overdo.

PAssover recipes make use of Matzah, as a majority of us do not eat bread or wheat or grain products.
Its hard but we can be creative.
For a first night whioch is friday I am making matzo crusted chicken.

2-5 pounds chciken that ahs been deboned.( this yeilds about 1 1/2 - 2 pounds chicken meat.

1/2 can matzo meal
good seasons extra zesty powder

1 egg mixed with 1 tablespoon water

Corn oil to deep fry in
ziplock bag

Debone and rinse your chicken. take chunks and dump in egg.

In the ziplock bag dump matzo meal and seasonsing. Remove chicken from egg and dump into ziplock bag and shake up.

IN a hot oiled skillet place chciken and cook on medium temp until tender.
serve with pickled beets and sweet and sour cabbage
