This is a special treat

1 package frozen salmon, or 1 1lb salmon fillets.
MAke sure its skinned and boned please.

small box Kosher Salt
4 tablespoons sugar
1 dill frond

Glass baking dish with cover

This takes two days to be perfect.
sprinkel kosher salt into a thin layer at bottom of baking dish. On top of that sprinkle a bit of table sugar and a piece of dill frond.
Lay fish on top of that. Then lay dill frontd sprinkle sugar and top with a crust of kosher salt. Cover and set in fridge overnight , or at least five hours or more.
Remove from fridge and rinse off coatings and was fish from all residue.
Do this a second time and set in fridge.
After a second curing risne all coatings off and dry on cheese cloth or towel to make it easier to handle.
Usinga verys harp knife cut against grain into very thin slices.

Use this on
Bagels with cream cheese, with cream cheese as an appetizer rollup, cooked in eggs. Anywhere that you woudl use a cured fish or LOX you use this.
Its alot cheaper for a pound than if bought in a package.
