Default Asian Turkey Pasta

Asian Turkey Pasta

Warm peanut-flavored turkey tops chewy soba noodles in this tasty dish. Look for soba noodles (Japanese buckwheat noodles) in the international food section of your grocery store.

Number of Servings: 6
Serving Size: 1 cup
Ingredients
Name Measure Weight
reduced fat peanut butter 1/4 cup ---
low fat, low sodium beef broth 2/3 cup ---
ground red pepper 1/4 tsp ---
lite soy sauce 3 Tbsp ---
dry sherry 1 Tbsp ---
cornstarch or arrowroot powder 1 Tbsp ---
water 2 Tbsp ---
diced cooked turkey (preferably white meat) 3 cups ---
carrots, thinly sliced 1/2 cup ---
diced red pepper 1/4 cup ---
sliced scallions 1/4 cup ---
romaine lettuce leaves 5 large ---
cooked soba noodles (keep warm) 3 cups ---
toasted sesame seeds 1 Tbsp ---
Preparation Instructions
1 In a large saucepan over medium heat, combine the peanut butter and the broth. Stir until smooth. Add the red peppers, soy sauce, and sherry. Bring to a boil.
2 Lower the heat and simmer for 3 minutes. Combine the cornstarch or arrowroot powder with the water. Add to the sauce. Cook until thickened.
3 Add the cooked turkey, carrots, pepper, and scallions to the sauce. Toss to coat well. Place the romaine lettuce leaves on a platter.
4 Place the warm soba noodles on top of the lettuce. Pile the turkey salad in the center of the noodles. Sprinkle on the sesame seeds and serve.

Great call on the turkey. It can be very inexpensive fresh. I have to stay away from the peppers though. Mt tu tum can't handle that. Soba noodles are big fun. They have a great taste and make you feel silly for having plain noodles!

Me? I'm a peanut butter fanatic, and I love sesame seeds, too! Asian foods that offer peanut butter with meat - make my day!

It sounds good. But it's not really asian cuisine even if you use japanese noodles. Sorry, I'm asian and I despise it when people use the term loosely.
