Default Chcolate Mousse Pie

Chocolate Mousse Pie



Number of Servings: 8
Serving Size: 1 piece
Ingredients
Name Measure Weight
9-inch prepackaged pie crust 1 ea ---
1.4-ounce packages sugar-free fat-free chocolate pudding mix 2 ea ---
fat-free milk 1 1/4 cups ---
8-ounce container fat-free whipped topping, divided 1 ea ---
mini semi-sweet chocolate chips 2 Tbsp ---
Preparation Instructions
1 Preheat oven to 400 degrees. Bake pie crust according to package directions. Remove from oven and cool thoroughly.
2 In a medium bowl, whisk pudding mix and milk. Fold half (4 ounces) of whipped topping into pudding mixture and fold until fully blended.
3 Spread pudding mixture into pie crust and top with remaining whipped topping. Sprinkle top with chocolate chips.

How is this a diabetic recipe? The chocolate chips are a no no. I would say this recipe has way too many sweetened elements and is guaranteed to cause a spike. I have a pie crust ideal for this that has been sitting on my shelf for ages for this reason. I think a yogurt parfait with natural granola would be about one third the calories and not empty food value either.
