I've been taught to not think of any food as "bad." I am counting carbs and I can cover any carb and keep my blood sugars good. I just avoid sweet soda and juice, any drink with a lot of sugar in it because there is no way to catch up with it because liquid hits your system faster.
From what I have read Chinese food makes your blood sugar go up unexpectedly. Just expect it to do that and do your 2 hour after you eat blood sugar check and bolus to cover whatever you are high.
As far as snacks late at night, there are a lot of things you can eat that have very little carbs if you are still hungry then. Make good choices.
